- المَحمُوص أو عَيشُ المَحمُوص أو عَيشُ الحُسَين هي وجبة سعودية تتكون من الأرز والبصل المُحَمّص، وتنتشر في القطيف وبعض مناطق الأحساء والبحرين، يمتاز المحموص بلونه البُنّي الغامق المائل إلى السواد نتيجة وجود كميات كبيرة من البصل المحمص بالزيت والليمون الأسود الجاف، يُضاف للمحموص الأسماك واللحوم والدجاج والروبيان، إلا أنها كانت تُعد قديماً بدون لحوم أو دجاج فقط بالأرز والبصل المحمّص ويعتقد أن ذلك بسبب كون الناس فقراء قديماً وميسورين الحال ولم يكن باستطاعتهم شراء اللّحوم بينما كان البصل رخيص الثمن ومتوفر إلا أن بعض مؤرخي المنطقة ينفون هذه القصة. ارتبط عيش المحموص بـالعشر الأوائل من محرم بين سكان المنطقة، حيث أنه الوجبة المتداولة في الحسينيات في بعض المناسبات الدينية. - Mahmous (Arabic: محموص) an Arabic rice dish popular in Qatif and al-Hasa regions in Saudi Arabia, and Bahrain regions. Its primary ingredients are rice and onion. The dish may have originated before the rise of oil in Saudi Arabia when the people in Qatif were too poor to offer such dish with chicken, fish or meat so onion was used instead. And because of its black color and it can be prepared with relative ease with inexpensive ingredients, it is widely offered during Ashura to the audience to indicate a climate of grief during that period.
